Rolf Hiltl runs the Hiltl restaurant in Zurich in the fourth generation. He after a culinary apprenticeship at the Dolder Grand Hotel in Zurich and training at the Lausanne Hotel Academy, he worked in San Francisco, Acapulco and Paris.

Founded in 1898 by Ambrosius Hiltl, the house of Hiltl in Zurich is the oldest vegetarian restaurant in the world (according to the Guinness Book of Records) and the leading establishment of its kind (Hiltl’s own claim). Today, the company is run by the fourth generation of the Hiltl family and is known far beyond the Zurich city limits and the borders of Switzerland. At several locations in Zurich, Hiltl offers premium à la carte dishes, innovative buffets, food to go, catering and the «Hiltl Vegimetzg», the fist vegetarian «butcher shop» in Switzerland. The fifth floor of the Hiltl building is the home of the Hiltl Academy, a competence centre for vegetarian and vegan cooking where new recipes are created and tested; there are professional cooking courses, and the Hiltl cookbooks are produced here.
